Tortilla pizza
Whole wheat tortillas topped with oven roasted tomato sauce and (vegan) cheese. Add your favorite (pizza) toppings and you have created a great snack or light lunch!

- 4 whole wheat tortillas (recipe for homemade tortillas in Notes)
- 1 cup oven roasted tomato sauce (recipe for homemade oven roasted tomato sauce in Notes)
- 1 cup cheese (mozzarella or other (vegan) cheese; grated)
- 1 cup toppings (of choice)(optional)
- ½ tbsp olive or avocado oil (for greasing the baking sheet)
Preheat oven as hot as your oven will go (about 440F/225C) for about 15 minutes.
Prepare your toppings. Whatever you like on it; cut it, chop it, toast it. And grate some cheese.
Lightly grease a baking sheet with some olive or avocado oil and place 4 tortillas on it.
Spread 1-2 tbsp tomato sauce on each tortilla. Add your preferred toppings and finish off with grated cheese.
Slide in the oven for about 5 minutes or until the edges are golden brown and crispy. If you are using fresh herbs or arugula sprinkle it on after they come out of the oven. Your lunch is ready. Enjoy!
