Ingredients

  • 1 cup pizza sauce (I highly recommend using this homemade oven roasted tomato sauce. For details and ingredients see Notes below*)
  • 1 batch whole wheat pizza dough ** for the recipe
  • 2-3 cups grated cheese (of choice, see text above for recommendations)
  • 2-3 cups toppings (of choice, see text above for recommendations and inspiration)
  • 1-2 handsful garnishing (of choice like fresh herbs and greens. See text above for recommendations and inspiration)

Equipment

  • Sheet pan
  • Rolling pin

Method

Oven roasted tomato sauce (if you are making pizza sauce yourself)
  1. Cut tomatoes in half, line them in on a high rimmed baking sheet, drizzle balsamic vinegar and olive oil on it, sprinkles with salt, pepper and oregano and slowly roast them in the oven for 2-2½ hours.
  2. After 1¾-2 hours, add onion and garlic to the baking sheet.
  3. Blend the roasted tomatoes, onion and garlic into a smooth sauce.
Whole wheat pizza dough
  1. 1¼-1½ hours before you want to serve your sheet pan pizza start making the dough. It needs to rise for about 1 hour. For a detailed how-to just follow this simple whole wheat pizza dough.
Prepare all the toppings
  1. In the meantime while the pizza dough is resting, prepare all the toppings.
Especially when everyone wants to decorate their own piece of the pizza, it is a good idea to have everything ready on the countertop. Like a salad bar, all you have to do is walk along the line of toppings with your bare rolled out pizza dough.
  2. Preheat the oven to 240C/465F or as high as your oven will go. And prepare your sheet pan by lightly greasing it and dusting it some flour.
Roll out the pizza dough
  1. Roll out the pizza dough in a rectangle that is just a bit large than the sheet pan you are using to bake the pizza in. This way there is a bit of an overhang so the edges can crisp up in the oven.
  2. Transfer the dough to the prepared sheet pan.
Add toppings to the pizza
  1. First add pizza sauce to the pizza bottom.
  2. Now add your preferred toppings; veggies, fruit, meats, fish, seafood, pesto
  3. And finally add some cheese.
Bake the pizza
  1. Center the pizza on the middle rack and bake for 5-7 minutes until all cheese has melted and the sides are crispy and golden brown.
Garnish your sheet pan pizza
  1. I highly recommend sprinkling herbs, greens (and some fruits and fresh cheese) after baking to keep them vibrant and fresh.
  2. Cut the pizza in squares and you are ready to serve!
