½tbspapple cider vinegar or liquid from a jar of (homemade**) dill pickles
½tsponion powder
½tspgarlic powder
Greens
400grkale or other greens (or a mix)(approx. 6 cups)
apinchsalt(optional)
1tbspvinegar(apple cider, balsamic or regular white vinegar)(optional)
Toppings
ripe avocado(sliced)
(pickled) red onion rings
(cherry) tomatoes(halved or sliced)(marinated* or not)
(homemade**) pickles(or sub sliced cucumber)
Instructions
Preheat the oven to 425F/220C and line 2 baking sheets with parchment paper.
Prep all the ingredients; slice/halve the (cherry) tomatoes, onion, avocado, and chop lettuce/greens. And also cut the (sweet) potatoes into fries.
Optional: after cutting the greens, especially when I using kale, add a pinch of salt and ½-1 tbsp of balsamic vinegar to it and massage the greens. Leave it to marinate until assembling the bowl.
Bake the fries and the bacon in the oven
Toss the sliced (sweet) potatoes with the oil and seasoning, before spreading them out on the baking sheet so that no two fries touch. Bake them in the preheated oven for 30 minutes or until golden brown and crisp.
Lay the sliced of bacon out on the second baking sheet and bake it for 15-20 minutes in the preheated oven, or until crispy and golden brown.
Burger patties
While the fries and bacon bake in the oven, make the burger patties.
Season the ground beef, add oat flour or bread crumbs, an egg and combine it all to form patties. Or make them meatless using this recipe.
In a hot skillet brown the patties on both sides, until they are just not pink on the inside anymore.
Special burger sauce
While browning the beef patties, I whisk together all the sauce ingredients in a small bowl until smooth.
Assembling the burger and fries bowls
Divide the greens between the bowls and top them with (marinated) tomatoes, onions, pickles, avocado, beef patties, crispy bacon and the (sweet potato) fries.
Drizzle the sauce over the bowls and/or leave it on the side for dipping.
Notes
