Apple cinnamon french toast bake

French toast prepared in the oven (time saver!) Soft cinnamon infused apples make this the best Sunday breakfast!

Ingredients
  

  • 8 slices (whole wheat) bread (or other type of bread)
  • 2 medium size green apples (sliced, peel not removed)
  • 4 medium size eggs
  • 185 ml milk (of choice. I used oat milk)(approx ¾ cup)
  • 3-4 tsp cinnamon (divided, plus extra to taste)
  • 2 tbsp maple syrup
  • 1-2 tbsp coconut oil (or (vegan) butter) for greasing)
  • 1 tsp sea salt
  • 1 tsp pure vanilla extract
  • 2 tbsp sliced almonds (optional for topping)
  • 2 tsp coconut sugar (optional for topping)(or other type of sugar)

  • small (ceramic) oven dish (ideally 10'x6' / 25x15cm)

Method
 

  1. Preheat the oven to 350F/175C
  2. Cut 8 slices of bread. I recommend to use a loaf and cut slices off yourself instead of precut bread (but if that is what you have go for it)
  3. Slice the apples. No need to peel them. Simply wash them and cut them up in thin slices.
    Place the slices in a medium size mixing bowl and toss them with 1-2 tsp of cinnamon.
  4. Grease a small (ceramic) baking dish with coconut oil or (vegan) butter and stack the slices of bread in it.
    Now slide a slice (or 2) of apple in between each slice of bread.
  5. To make the egg mixture whisk together the eggs, milk, 1-2 tsp cinnamon, maple syrup, salt and vanilla in the mixing bowl you used for the apples. Now that everything is combined, pour the mixture over the bread+apples in the baking dish making sure to evenly divide it.
  6. Before placing the baking dish in the preheated oven, sprinkle the dish with slivered almonds and a bit of coconut sugar (this is optional although highly recommended). And add some extra cinnamon if you'd like.
  7. Bake for 15-20 minutes until the edges of the bread are crispy. Take the dish out of the oven. Your french toast bake is ready to be served!
