- 2 cups strawberries (fresh or frozen)
- 1 small lemon (juice, to taste)
- 2 tbsp water (to prevent the strawberries from sticking to the saucepan)
- 0-3 tbsp honey (or agave syrup or maple syrup; to taste)
- 2-3 tbsp chia seeds
Add strawberries, water, honey and lemon juice to a small saucepan and heat it up. Once it is boiling, reduced the heat to low and let it simmer until the fruit has softened.
Mash the fruit with a fork (mash less if you want a chunkier jam, more for a smoother jam).
Take it off the heat and add the chia seeds. Stir and let it sit for 5-15 minutes so the jam can get firm(er).
Transfer to a jar and refrigerate.
