Homemade healthy cocoa puffs

Puffed quinoa coated with cacao powder and sweetened with a bit of maple syrup. I actually think you can call these homemade cocoa puffs healthy (and super delicious)!

Ingredients
  

  • 2 tbsp coconut oil
  • 3 tbsp maple syrup
  • 3 tbsp unsweetened cacao powder
  • 3 cups puffed quinoa (large) (or sub puffed amaranth, puffed brown rice, puffed durum, puffed millet) (I have used durum, millet and large size quinoa before.. all work great)

Instructions
 

  • Preheat the oven to 340F/170C and line a sheet pan with parchment paper.
  • Mix coconut oil, maple syrup and cacao powder. It will become a thick paste (sticky mess..).
  • Add the quinoa puffs to it and mix it all well until the puffs are evenly coated.
  • Spread the coated puffs on your lined baking tray and I bake them in the oven for just 3-5 minutes.
  • Once they have cooled off, break them up a bit (if they are clustered together) and your homemade cocoa puffs are ready!
