Puffed quinoa coated with cacao powder and sweetened with a bit of maple syrup. I actually think you can call these homemade cocoa puffs healthy (and super delicious)!
3cupspuffed quinoa (large)(or sub puffed amaranth, puffed brown rice, puffed durum, puffed millet) (I have used durum, millet and large size quinoa before.. all work great)
Instructions
Preheat the oven to 340F/170C and line a sheet pan with parchment paper.
Mix coconut oil, maple syrup and cacao powder. It will become a thick paste (sticky mess..).
Add the quinoa puffs to it and mix it all well until the puffs are evenly coated.
Spread the coated puffs on your lined baking tray and I bake them in the oven for just 3-5 minutes.
Once they have cooled off, break them up a bit (if they are clustered together) and your homemade cocoa puffs are ready!
