Balsamic mustard dressing
This is my go-to salad dressing. It has great depth of flavor created by the acidity of balsamic vinegar and mustard, the earthiness of extra virgin olive oil and some sweetness from honey.

- 1 cup extra virgin good quality olive oil
- ¼ cup balsamic vinegar
- 1 tbsp Dijon mustard (or other type of mustard of your preference)
- 1 tsp honey (optional, leave out if vegan)
- 1 clove garlic (minced)
- ½ tsp sea salt (to taste)
- ½ tsp freshly ground black pepper (to taste)
