Balsamic mustard dressing

This is my go-to salad dressing. It has great depth of flavor created by the acidity of balsamic vinegar and mustard, the earthiness of extra virgin olive oil and some sweetness from honey.

Equipment

  • Dressing shaker or tall measuring jug

Ingredients
  

  • 1 cup extra virgin good quality olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp Dijon mustard (or other type of mustard of your preference)
  • 1 tsp honey (optional, leave out if vegan)
  • 1 clove garlic (minced)
  • ½ tsp sea salt (to taste)
  • ½ tsp freshly ground black pepper (to taste)

Instructions
 

  • Add all ingredients to a dressing shaker and shake well or use a tall measuring jug and whisk until emulsified.
  • Add extra salt and/or black pepper if needed.
