Healthy apple oatmeal muffins

Warm notes of apple and cinnamon. Made with gluten free oats. Great as a snack, treat or on-the-go breakfast. Or even dessert with some vanilla ice cream!

Ingredients
  

  • 3 cups gluten free oats (you can use quick oats as well, but texture will be different)
  • 2 tsp baking powder
  • 1 cup milk (I used almond milk, but you can sub regular milk or other type of milk)
  • 2 Granny Smith apple (1 apple: peeled and diced, the other: peeled and cut into large chunks = for the apple sauce) (if using store bought apple sauce you will need ½ cup and you only need 1 apple)
  • ¼ cup maple syrup
  • 2 tbsp coconut oil (+ extra for greasing the muffin tin)
  • ½ tsp sea salt
  • 2 eggs
  • tsp ground cinnamon
  • 1 tsp vanilla extract
  • ½ cup raisins (optional)

Instructions
 

  • Preheat oven to 375F/190C
  • To make the apple sauce: add the large chunks of apple and a bit of water to a saucepan. Bring to boil, turn the heat to low and let simmer for about 10 minutes until the apples are soft. Now mash the apples with a masher until smooth. Let cool off a bit before adding to the other ingredients. You can skip this step if you use store bought apple sauce
  • In a medium size mixing bowl mix oats and baking powder.
  • In another mixing bowl mix the rest of the ingredients including the apple sauce you just made.
  • Add oat mixture to the other bowl and stir well to combine.
  • Grease a muffin tin or line with muffin paper.
  • Divide batter over muffin tin and slide into preheated oven. Bake for 25-30 minutes.
  • Let cool off for 5 minutes in the muffin tin. Now transfer muffins to a cooling rack for further cooling (if you can resist). Store in an airtight container at room temperature, but in my opinion they are best fresh out of the oven.
