Roasted tomato salsa

This salsa made with oven roasted tomatoes and chipotle has so much flavor. Great for tacos, enchiladas, burritos. This is how you make it:

Ingredients
  

  • 6 oven roasted tomatoes*
  • 1 chipotle in adobo
  • 1 tomato (diced)
  • 1 bunch of cilantro (finely chopped)
  • 1 small red onion (finely diced)
  • 1 clove of garlic (finely diced)
  • 1/3 cup of pineapple (cut into small chunks)
  • 1 lime (juiced)
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper

Instructions
 

  • If you haven't yet roasted your tomatoes, do this first. And let them cool off**
  • Blend the tomatoes like you are making a sauce. Add the chipotle and blend some more.
  • Add diced tomato, red onion, cilantro, lime juice, garlic, pineapple, salt and pepper to the blended tomato mix
