Pineapple ginger salsa

- 1 handful cilantro leaves (chopped)
- ½ cup red onion (chopped)
- 1 clove garlic (minced)
- 1 jalapeño (chopped, no seeds)(start with 1/3 and adjust to taste)
- 1 tbsp white vinegar (or apple cider)
- 2 tbsp fresh ginger (minced)
