Birthday baked donuts
Birthday baked donuts. A vegan batter speckled with sprinkles, colored icing and fun sprinkles for a festive look. The best birthday treat!

- 115 ml milk of choice (I used almond milk)(approx. ½ cup)
- 2 tsp apple cider vinegar
- ½ tsp pure vanilla extract
- 175 gr maple syrup (or honey or agave syrup) (approx. ½ cup
- 90 gr coconut oil (approx. 7 tbsp)
- 250 spelt flour (approx. 2 cups loosely packed)(or sub regular all purpose flour or gluten free blend)
- ½ tsp sea salt
- 1½ tsp baking soda
- ½ cup sprinkles (I used jimmies, non pareil will bleed too much)
Glaze
- 1½ cup powdered sugar (or sub xylitol powder)
- 3 tbsp milk (of choice)
- 1 tsp lemon essence (or sub vanilla extract)
- ½ tsp sea salt
- 1-2 drops natural food coloring (optional)
Garnishing
- ½ cup sprinkles (of choice; non pareils, jimmies, rainbows, hearts, shiny pearls, stars)
The donut batter
Add milk, apple cider vinegar, pure vanilla extract, maple syrup and coconut oil to a medium sized mixing bowl and whisk it all together. Set the bowl aside.
In another mixing bowl, stir together the flour, salt and baking soda.
Pour the wet mix into the mixed dry ingredients and. Mix it all together with a wooden spatula. Make sure not to over mix the batter.
Gently fold in the sprinkles.
Bake the donuts
Pour the sprinkled batter in a ziplock bag and cut the tip off (a bit narrower than the width of the donut mold).
Squeeze the bag and pipe the batter out into the donut mold. Make sure not to overfill the mold.
Bake the donuts in the preheated oven for 10-12 minutes. Once they are ready let them cool off for 5-10 minutes on a wire rack.
Glaze and decoration
Mix all the glaze ingredients together except for the food coloring in a wide bowl (wide enough to dip the donuts in). Once you reach a fairly thick but smooth consistency, add 1 or 2 drops of food coloring. If I want to make more than 1 color, first divide the white glaze into 2 or 3 batches and than add a different color of food coloring to each batch and stir until smooth. In another wide rimmed bowl add your sprinkles of choice.
Dip one side of the donut in the glaze and gently shake off the excess. Immediately after dip the glazed donut in the sprinkles and place it back on the wire rack so (more) excess can drip off.
The glaze will set very quickly and the donuts are ready to be served.
